I have a confession. I've been slacking when it comes to posting on this blog....

Pot Roast makes a great dinner. Especially if you are generally a go, go, go type of person. Its not hard at all in fact it is quite simple. Here is a great recipe for a warm, fast, easy to make dinner.

My mama's pot roast

1 oven bake bag
1 13x9 baking pan
1 two pound beef roast
3 small-medium potatoes peeled and chunked
1 pkg onion soup mix
1 jar home style beef gravy
1 clove minced garlic
1/2 pkg whole mushrooms quartered
1 small onion sliced
Pepper to taste
1/2 a green bell pepper sliced
1/2 bag of baby carrots or 2 regular carrots peeled and sliced
1/2 bunch of celery roughly chopped
1 cup of water

Set the oven to 350 degrees and let it pre-heat. Take your roast out of its pkg and wash it, lay it inside of the baking back and lay that in the pan. Inside of the bag add all of the ingredients listed above and tie the back shut. (double the knot)
poke some holes in the top of the bag so you don't have a mess.(if you do not do this it will explode in your oven) Then place the roast in the oven(after its fully heated) for about 1-1 1/2 hours. When it is done just cut open the bag and serve. Very quick ,easy, and delicious.

Look, I am posting my first recipe. It is one of my favorites too. Very simple and very delicious...

Apple Cranberry Cobbler

1/4 cup of butter or shortening
1/2 cup of sugar
1 egg
1/2 cup of milk
1 tsp vanilla
1 cup of flour
2 tsp baking powder
2 tsp- 1TBsp cinnamon
1/8 tsp of lemon juice
2 TBsp brown sugar
1-2 cups sliced apple and cranberries

Heat your oven to 35o degrees. Begin by mixing the butter/shortening, sugar, egg, milk, vanilla, baking powder, cinnamon, and flour.

In a separate bowl mix the sliced apples, cranberries, lemon juice and brown sugar.

Add the fruit mixture to the batter mixture and fold in. Place the mixture into a already greased baking pan. (you can use crisco (shortening) or butter and flour to line pan)

Bake for about 45-50 minutes. Place on cooling rack when finished baking.

makes about 6 servings.

You can top each serving with caramel or whipped cream to make it even tastier.
