Fried chicken

1pkg chicken breasts
1-2 cups flour
3 or 4 beaten eggs
bread crumbs (preferably Italian)
canola or veggie oil

1. Beginning, fill up your skillet about half of the way full with your veggie or canola oil. Set it a little over medium.
2. Remove the chicken breasts from the package. Clean off any fat Place the cleaned chicken on a plate.
3. Keeping an eye on your oil, take out three good size bowls (or two plates and a bowl) , In one place your flour, another your breadcrumbs and the last one 3/4 eggs(beat them). Heat your oven to 350 degrees.
4. take your chicken, roll it in the flour, the egg and then the bread crumbs. place in your skillet. let it cook to a gloden brown. then flip. When done place all the finished chicken on a baking tray and bake for about ten minutes or so. flip them half way trough.
5. remove from oven and serve with your favorite sides!

makes about 4-6 chicken breasts depending on size.

mashed garlic butter red potatoes

4-5 medium red potatoes.
2 Tbls butter.
1 garlic clove or garlic powder
1/4 cup milk

1. When beginning, place a pot on the stove on high 1/2 full of water, Add a dash or two of salt. Bring to a boil.
2. While waiting for your water to boil, wash your potatoes and cube them. Once the water is boiling place them in the pot. Let it do its thing for about 15 minutes then check to see if they are soft all the way through. Once they are drain out the water.
3. Add about two Tablespoons of butter. 1/4 cup of milk and a couple of shakes of garlic powder(or one Garlic clove minced). Mash it all together.
